We know how hard it is to cook when you’re caravannin around Australia, so we decided to share this easy recipe that will do wonders!
Ripper and I have been very inspired by the diversity when we schlonged round the Nut [sic]. We’ve decided to create a curry that represents our experience during our week tour down south: A Texan Spice and Vegemite Potato Curry with Three Beans. Now I know what you’re thinking, three beans?! Yes! Three beans! Let’s show you how it’s done

Prep: Dig a hole somewhere between 30cm and 90cm deep. You will want to place the pot here as it bubbles over. If you’re prepping for a week, deepen the hole by a meter for every days worth.
STEP ONE: Be underprepared.
STEP TWO: leave gas cooker accidentally on outside while you cut up potatoes, onions and Vegemite.
STEP THREE: Nut.
STEP FOUR: Cook veggies of your choice for 40 minutes. Take an hour if using green potatoes.
STEP FIVE: Bung a can of chickpea from the campsite next to you and use that. You’ll want to keep the chickpea water but not the chickpeas.
STEP SIX: Stir in your Texan Spice and add three teaspoons of Vegemite. You won’t regret this.
STEP SEVEN: Add other beans, realise you don’t have space in your gas cooker but do it anyway.
STEP EIGHT: This is where the fun begins! Leave pot on simmer for an hour and read Moby Dick by Herman Merville (non negotiatiable) Have the dish boil over and spill, and you’re all good! Yummmm. A quick and easy meal done in 10 minutes!
